Blueberry Crisp Recipe--Gluten Free

Fresh flavorful blueberries tease the tongue in a crunchy, fruity dessert concoction, not to mention the trademark berry aroma wafting through the house.

My Blueberry Crisp Recipe is quick and easy, a wonderful dessert for beginning cooks who wish to impress.  Better still, it uses simple ingredients you keep in your gluten-free pantry.

Rich and delicious, it presents as beautifully as it tastes, especially when served in a fancy dish and topped with a generous dollop of fresh whipped cream or a scoop of yummy homemade vanilla ice cream.

It's an old fashioned dessert and a surprisingly delightful comfort food.  

Can you think of better way to add outstanding nutrition to your diet?  Blueberries are a super-food, loaded with antioxidants, bioflavonoids, Vitamins C and K, and manganese.

Make a double batch, because friends and family will clamor for second . . . and third helpings!  

Or, freeze it to have on hand when unexpected guests drop by for a special visit; just thaw and serve.  A double batch of my Blueberry Crisp Recipe is a marvelous take along to any potluck gathering.

Here’s a secret . . . I love the Fruit Crisp Topping, so I always double that part of the recipe!


Blueberry Crisp Recipe

Time:  1 hour

Servings:  6 to 8

Blueberry Filling

Ingredients

  • 4 cups fresh or frozen blueberries
  • 1 cup granulated white sugar
  • ¼ cup Minute Tapioca
  • 1 tablespoon lemon juice
  • ½ teaspoon ground cinnamon
  • Dash salt

Instructions

  1. Preheat oven to 350° Fahrenheit.
  2. In a large mixing bowl, stir together blueberries, sugar, tapioca, lemon juice, ground cinnamon and salt.
  3. Evenly spread blueberry filling in an ungreased 8x8x2 inch baking dish.

Fruit Crisp Topping

Ingredients

Instructions

  1. In a medium mixing bowl, stir together sugar, flour, cinnamon and salt.
  2. Add butter and cut in until mixture turns into a crumble.
  3. Sprinkle evenly over blueberry filling.
  4. Bake for 40 minutes or until top is golden brown and filling is bubbling.
  5. Remove from oven and cool for a short while.
  6. Serve warm with cream or fresh whipped cream, or serve cold with a scoop of vanilla ice cream.

Variations

Microwave Magic

  1. Double the recipe for Fruit Crisp Topping.
  2. Spread ½ of the topping in bottom of an ungreased 8x8x2 inch microwave safe baking dish.
  3. Evenly spread blueberry filling over Fruit Crisp Topping.
  4. Sprinkle Fruit Crisp Topping evenly over blueberry filling.
  5. Cook in microwave oven on full power for 5 to 7 minutes or until filling is bubbling.


Slow Cookery

  1. Evenly spread blueberry filling in the bottom of an ungreased slow cooker.
  2. Sprinkle Fruit Crisp Topping evenly over blueberry filling.
  3. Cover and cook on low for 5 to 6 hours.
