With sheer culinary ingenuity Gluten Free Banana Dessert was created, one of Cat’s family’s favorite dessert recipes. Reminiscent of old time banana splits or banana cream pie . . .

. . . delectably mouthwatering!

Bananas are an amazing gluten free food!  

They are packed with nutrition that improves the health of bones, eyes, the heart and the immune system.  Bananas are great energy food for folks on the move; yet, their calming qualities make a good sleep aid and soothe digestive disturbances.

Go Green

or a special treat, splurge on organic foods; for a few cents more per pound bananas taste better and generally have a longer shelf life.

Pre-packaged by nature in a happy color, bananas’ biodegradable peels are “green”.

Reuse the peels; tuck them beneath the soil at the foot of roses to fertilize them and to help prevent diseases. Reduce waste by recycling them into a backyard compost pile.

Think Outside the Peel

Better than candy, bananas' lip-smacking sweetness can replace sugar in muffins, cookies and tea breads.  Perfect on hot days, a frozen banana is more refreshing than a popsicle; so too, are banana smoothies instead of milkshakes.

Change up culinary routines; use sliced bananas instead of “apple” in Waldorf salad, blueberries in pancakes, or strawberries in crepes.

One of the most convenient foods available, bananas make wonderful instant baby food and are a grab-and-go delight for busy people on the run.

Bananas are also a great emergency food; unexpected dinner guests, a pantry shy on ingredients, no time to cook . . .

Gluten Free Banana Dessert

Time:  15 minutes

Servings:  1 per banana

Ingredients

  • 1 banana
  • whipped cream
  • 2 tablespoons unsweetened coconut, flaked
  • 2 tablespoons organic walnuts, chopped

Instructions

  1. In a small pan over medium low heat, toast walnuts until fragrant.  
  2. Remove from pan and set walnuts aside to cool.  
  3. Wipe out the pan with a paper towel.  
  4. Toast coconut until golden.  
  5. Remove from pan and set aside to cool.  
  6. Peel banana and thinly slice onto a dessert plate or into a bowl.  
  7. Top sliced banana with a decorative dollop of whipped cream.  
  8. Sprinkle toasted coconut over top of whipped cream.
  9. Sprinkle toasted, chopped walnuts over top of dessert.  
  10. Serve immediately.

Variations

  • Sprinkle a cinnamon and sugar mixture over the top.
  • Toss on a handful of in-season fruit, for example, fresh berries, or pineapple.
  • For an elegant presentation, garnish with shaved chocolate or decorate with Chocolate Ganache.
  • Top with a small dollop of whipped cream and a bright maraschino cherry.
