My Gluten Free Chocolate Chip Cookies are so good, you’ll never know you’re eating America’s favorite cookie . . . gluten-free!

This recipe passed the “cookie” test with friends, family and co-workers, who thought they were eating the real thing.When they were told they were gluten-free cookies, they couldn’t tell the difference.  

In fact, they raved these were the best chocolate chip cookies they’d ever tasted . . . better than any others!

So, what makes my Gluten Free Chocolate Chip Cookies the best ever? It’s all in the dough base I named, Gluten Free Caramel Cookies.

This key recipe is the base for over 70 scrumptious cookie variations to date, including Gluten Free Chocolate Chip Cookies.

Better still, there are many variations to accommodate corn-free, dairy-free, chocolate-free and egg-free diets.

Gluten Free Caramel Cookies—Key Recipe

Time:  about 45 mintues

Servings:  48 to 60 cookies, depending on size

Ingredients:

Gluten Free Chocolate Chip Cookies

  • 2 cups frozen chocolate chips

Instructions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a small mixing bowl, stir together gluten free flour blend, potato starch, baking soda and salt, and then set aside.
  3. In a large mixing bowl, cream butter and sugar together until light and fluffy.
  4. To the sugar mixture, add vanilla extract and egg, and then beat well.
  5. Gradually add the dry ingredients to the creamed mixture, mixing well.
  6. (Add optional stir-ins, see variations below.)
  7. Set aside for 15 minutes to allow the gluten free flour blend to absorb the creamed mixture.
  8. Roll into 2 inch balls and place on an ungreased cookie sheet.
  9. Bake for 10-13 minutes.
  10. The cookies will appear slightly under-cooked, but will continue to cook once removed from the oven.
  11. Cool cookies on cookie sheet for 15 minutes.
  12. With a spatula, carefully remove cookies onto a wire rack to finish cooling.

Gluten Free Chocolate Chip Cookies

Almond Cookies
  1. Omit vanilla extract.
  2. Add 1 teaspoon gluten-free almond extract. 
  3. Stir in 2 cups slivered almonds.
  4. Bake and cool as directed in key recipe.


Ambrosia Cookies

Ambrosia Cookies
  1. Omit vanilla extract.
  2. Add 1 teaspoon gluten-free orange extract. 
  3. Stir in 1 cup frozen white chocolate chips, 1 cup chopped dried cherries, 1 cup chopped dried pineapple, 1 cup cornstarch-free flaked coconut, and 1 cup chopped pecans.
  4. Bake and cool as directed in key recipe.


Apricot Citrus Cookies

Apricot Citrus Cookies
  1. Omit vanilla extract.
  2. Add 1 teaspoon gluten-free lemon extract and 1 teaspoon grated lemon peel. Stir in 1 cup chopped dried apricots and 1 cup cornstarch-free flaked coconut.
  3. Garnish the top with a slice of dried apricot.
  4. Bake and cool as directed in key recipe.


Apricot Nut Cookies

  1. Prepare dough as directed in key recipe.
  2. Stir in 1 cup chopped dried apricots and 1 cup chopped nuts of your choice.

  2. Stir in 1 cup chopped dried apricots, 1 cup cornstarch-free flaked coconut, and 1 cup chopped nuts of your choice.

  1. Prepare dough as directed in key recipe.
  2. Stir in 2 cups chopped dried banana slices and 2 cups frozen white chocolate chips.
  3. Bake and cool as directed in key recipe.
  4. Decorate with Vanilla Cookie Icing.


Banana Split Cookies

Banana Split Cookies
  1. Prepare dough as directed in key recipe.
  2. Stir in 2 cups chopped dried banana slices, 2 cups frozen chocolate chips, 1 cup cornstarch-free flaked coconut, 1 cup chopped dried cherries, and ¾ cups chopped salted peanuts.
  3. Bake and cool as directed in key recipe.


Black & White Cookies

Black & White Cookies
  1. Prepare dough as directed in key recipe.
  2. Stir in 1 cup frozen chocolate chips and 1 cup frozen white chocolate chips.

Caramel Cookie Icing  

  1. In a small mixing bowl add 1 cup corn-free powdered sugar and ½ teaspoon gluten-free caramel extract. 
  2. Add slowly while stirring, 1 tablespoons milk, cream, milk substitute or water, until desired consistency is reached.


Carob Chip Cookies

  1. Prepare dough as directed in key recipe.
  2. Stir in 2 cups frozen carob chips.
  3. Bake and cool as directed in key recipe.


Cherry Almond Coconut Cookies

  1. To wet ingredients add ¼ teaspoon gluten-free almond extract. 
  2. Stir in 1 cup chopped dried cherries, 1 cup cornstarch-free flaked coconut and 1 cup slivered almonds.

Cherry Almond Oatmeal Cookies

  1. To wet ingredients add ¼ teaspoon gluten-free almond extract.

  1. Add 1 teaspoon ground cinnamon and 1 teaspoon ground ginger to dry ingredients.  
  2. Stir in 2 cups frozen chocolate chips and 1 cup chopped nuts of your choice.

Chocolate Cherry Refrigerator Cookies

  1. To wet ingredients add 2 ounces melted unsweetened bakers chocolate.
  2. Stir in 2 cups chopped dried cherries.  
  3. Roll dough into a one inch round log.
  4. Tightly wrap in plastic wrap.
  5. Refrigerate.  
  6. Preheat oven to 350 degrees Fahrenheit. 
  7. With a sharp knife, cut dough into 1 inch slices and place on ungreased baking sheet.

  10. Thaw overnight in refrigerator before baking.

  1. To wet ingredients add 2 ounces melted unsweetened bakers chocolate.
  2. Omit vanilla extract.
  3. Add 1 teaspoon gluten-free orange extract and 1 teaspoon grated orange peel. 
  4. Roll dough into a one inch round log.
  5. Tightly wrap in plastic wrap.
  6. Refrigerate.  
  7. Preheat oven to 350 degrees Fahrenheit. 
  8. With a sharp knife, cut dough into 1 inch slices and place on ungreased baking sheet.

Gluten-free Ginger Oatmeal Scotches
  1. To dry ingredients add 1 teaspoon ground ginger, ½ teaspoon ground cinnamon, ½ teaspoon ground nutmeg and 1/8 teaspoon ground cloves. 
  2. Stir in 2 cups frozen butterscotch flavored chips and 1 cup gluten-free rolled oats.

Ginger Snickerdoodles

Gluten-free Ginger Snickerdoodles
  1. To dry ingredients add 1 teaspoon ground ginger, ½ teaspoon ground cinnamon, ½ teaspoon ground nutmeg and 1/8 teaspoon ground cloves.
  2. Roll cookie dough balls in ½ cup granulated sugar and 1 teaspoon ground ginger mixture.  
  3. Bake as directed in key recipe.
  4. While cookies are still warm garnish tops with a sprinkle of ginger sugar.

Gluten Free Bar Cookies

  1. Prepare dough variation of your choice.
  2. Grease a 13 x 9 ½ x 2 inch baking pan with butter.  
  3. Spread dough variation of your choice evenly in baking pan.  
  4. Bake at 350 degrees Fahrenheit for about 15 to 25 minutes, or until done.
  5. Cool completely.

  1. Make cookie variation of your choice.  
  2. Scoop 1/3 cup frozen ice cream of your choice and “sandwich” it between 2 cookies. 
  3. Roll the sides in gluten-free cake sprinkles, chopped nuts, toasted coconut or chopped candy of your choice. 
  4. Wrap in plastic wrap. 
  5. Freeze until solid.

  2. Add slowly while stirring, 1 tablespoons milk, cream, milk substitute or water, until desired consistency is reached.


Mexican Chocolate Cookies

Mexican Chocolate Cookies
  1. Prepare dough as directed in Cinnamon Cookies Recipe.
  2. Mix in 2 ounces bakers chocolate, melted.

  1. In a small mixing bowl add 1 cup corn-free powdered sugar and ½ teaspoon gluten-free orange extract.

Ready to Bake Cookie Dough

  1. Roll dough variation of choice into 2 inch balls and place on an ungreased cookie sheet.  
  2. Freeze for 1 hour.  
  3. Place frozen dough balls in a sealed container and return to freezer.  
  4. To bake, remove dough balls from freezer and place on an ungreased cookie sheet.  
  5. Bring to room temperature.  
  6. Bake and cool as directed in key recipe.


Refrigerator Cookies

  1. Roll dough variation of your choice into a one inch round log.
  2. Tightly wrap in plastic wrap.  
  3. Refrigerate.  
  4. Preheat oven to 350 degrees Fahrenheit. 
  5. With a sharp knife, cut dough into 1 inch slices and place on ungreased baking sheet.  
  6. Bake and cool as directed in key recipe.
  7. Dough can be frozen.  
  8. Thaw overnight in refrigerator before baking.
