Over the years I've tried many gluten free flours and they usually work fine in most recipes.
After trying many gluten-free flour brands and mixes, I've come to the conclusion gluten-free flour recipes are a matter of personal taste, in my case, “family” pleasing.
My goal was to come up with homemade gluten free flour mixes that would substitute for all-purpose unbleached flour in most wheat based recipes with a ratio of one to one, meaning one cup of wheat flour can be substituted with one cup of gluten-free flour.
In test after test, my Gluten Free Flour Blend and mixes continue to outperform the others, and remain the gluten-free flour of choice in my family.
