Gluten Free French Toast Casserole

Family will belly up to the breakfast table when you pull this mouthwatering Gluten Free French Toast Casserole from the hot oven.  Dole it out with warm maple syrup drizzled over the top . . .

This delicious one-dish meal presents beautifully for brunch or special family gatherings.  Some folks enjoy this old-time favorite for regular fare!  We like it on weekends when family members gather close to reconnect after a long work week.

Add-ins

  • Add 1 cup raisins
  • Add 1 cup raisins and 1 cup chopped nuts
  • Replace apples with 1 cup chopped dried fruit of choice

Time:  about 1 hour, 15 minutes

Servings:  8

Ingredients

  • 1 - 12 ounce loaf gluten-free bread* cut into ¾ inch cubes
  • 1 apple, peeled and coarsely chopped
  • 8 eggs
  • 3 cups milk**
  • ¼ cup real maple syrup
  • 1 teaspoon Homemade Vanilla Extract
  • ¾ teaspoon sea salt
  • 1 teaspoon ground cinnamon
  • 3 Tablespoons cold butter, diced
  • 3 Tablespoons sugar
  • 2 teaspoons ground cinnamon
  • Maple syrup

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.  
  2. Grease a 13 x 9 x 2 inch baking dish.
  3. Spread bread cubes in bottom of baking dish.
  4. Sprinkle the chopped apples evenly across the top.
  5. In a mixing bowl, beat the eggs.
  6. Add the milk substitute, maple syrup, vanilla extract, sea salt and ground cinnamon.  
  7. Beat until well blended.
  8. Pour the egg mixture over the bread cubes.
  9. In a small bowl mix together the sugar and cinnamon.
  10. Sprinkle the cinnamon and sugar mixture over the top of the casserole.
  11. Dot the top of the casserole with butter pieces.
  12. Bake for 45-50 minutes or until a knife inserted near the middle comes out clean.
  13. Remove from oven and let stand for 5 minutes before serving.

Notes

*Udi’s Multigrain Gluten Free Bread works very well in this recipe.  Some gluten-free breads do not seem to hold up as well.

**Any liquid milk substitute works as well.  Unsweetened almond milk is used in this recipe because it makes baked goods superior.
