Gluten free mayonnaise is the foundation for many delicious salad dressings and sauces.

As a basic ingredient, use mayonnaise to make awesome dips for raw vegetables, gluten-free crackers or chips.

Impress your dinner party guests with a perfect salad dressing or sauce made with rich, creamy mayonnaise . . . astoundingly good.

Playing with food can be fun!

Get creative and add a punch of flavor to your mayonnaise by using different oils, such as olive oil or nut oils, different mustard variations, and ground peppers or chilies.

Make it tasty by using herbs fresh from the garden instead of store bought dried herbs.

Brighten the appearance and flavors by adding a little minced roasted red bell pepper, sun dried tomato, chopped scallions or fresh grated Parmesan cheese.

Add a dollop of sour cream to give it a little zest or thin it down with a bit of buttermilk.

Gluten Free Mayonnaise

Servings:  about 1½  cup

Ingredients

  • 3 egg yolks (or 1 egg)
  • 2 teaspoons white wine vinegar
  • 1½ teaspoon granulated white sugar
  • 1 teaspoon lemon juice
  • ½ teaspoon prepared Dijon mustard
  • ¼ teaspoon sea salt
  • dash ground cayenne
  • 1 cup cold pressed safflower oil

Instructions

  1. In a food processor or a blender, mix together egg yolks, vinegar, sugar, lemon juice, mustard, salt and cayenne.
  2. On high speed, very slowly drizzle in oil, processing until an emulsion forms and the mayonnaise thickens.
  3. Chill before serving.

Variations

Aïoli

  1. Add 2 cloves minced garlic.
  2. Substitute cold pressed virgin olive oil for safflower oil.

Bleu Cheese Citrus Dressing

  1. Prepare gluten free mayonnaise as directed in key recipe.
  2. In a small bowl, mix together ¼ cup mayonnaise, ¼ cup sour cream, 2 ounces crumbled bleu cheese, 1 tablespoon lemon juice, 1 teaspoon granulated white sugar, 1 teaspoon grated fresh orange peel and 1 teaspoon grated fresh lemon peel.
  3. Cover and chill for at least 3 hours before serving to let flavors blend.


Bleu Cheese Dressing

  1. Prepare gluten free mayonnaise as directed in key recipe.
  2. In a food processor or blender mix together until smooth, ½ cup mayonnaise, 2 ounces crumbled bleu cheese, 3 ounces cream cheese and 1/3 cup light cream.
  3. Stir in 2 ounces crumbled bleu cheese.
  4. Cover and chill for at least 3 hours before serving to let flavors blend.


Bleu Cheese Fruit Salad Dressing

  1. Prepare gluten free mayonnaise as directed in key recipe.
  2. In a food processor or blender mix together until smooth, ½ cup mayonnaise, 2 ounces crumbled bleu cheese, 3 ounces cream cheese, 1/3 cup light cream, ¼ cup orange juice and 1 tablespoon lemon juice.
  3. Stir in 2 ounces crumbled bleu cheese.
  4. Cover and chill for at least 3 hours before serving to let flavors blend.


Bleu Cheese Garlic Dressing

  1. Prepare gluten free mayonnaise as directed in key recipe.
  2. In a food processor or blender mix together until smooth, ½ cup mayonnaise, 2 ounces crumbled bleu cheese, 3 ounces cream cheese, 1/3 cup light cream and 2 cloves minced garlic.
  3. Stir in 2 ounces crumbled bleu cheese.
  4. Cover and chill for at least 3 hours before serving to let flavors blend.


Buttermilk Dressing

  1. Prepare gluten free mayonnaise as directed in key recipe.
  2. In a medium bowl, mix together 1/2 cup mayonnaise, ½ cup sour cream, ½ cup buttermilk, ¼ cup tomato juice, 2 tablespoons minced fresh chives, 2 tablespoons fresh grated Parmesan cheese, ½ teaspoon dry mustard, ¼ teaspoon celery seed, ¼ teaspoon paprika, 1/8 teaspoon garlic powder.  
  3. Cover and chill for at least 2 hours before serving to let flavors blend.


Chipotle Lime Sauce

  1. Prepare gluten free mayonnaise as directed in key recipe.
  2. In a small bowl, mix together ¼ cup mayonnaise, ¼ cup sour cream, 3 teaspoons lime juice and 1 teaspoon Tabasco™ Chipotle Pepper Sauce.
  3. Cover and chill for at least 30 minutes before serving to let flavors blend.


Classic Cole Slaw Dressing

  1. Prepare gluten free mayonnaise as directed in key recipe.
  2. In a small bowl, mix together ½ cup mayonnaise, 1 tablespoon apple cider vinegar, 2 teaspoons granulated white sugar, 1 teaspoon celery seed and ¼ teaspoon sea salt.
  3. Cover and chill for at least 2 hours before serving to let flavors blend.


Classic Potato Salad Dressing

  1. Prepare gluten free mayonnaise as directed in key recipe.
  2. In a medium bowl, mix together 3/4 cup mayonnaise, ¼ cup sour cream, 6 tablespoons dill pickle juice, 2 teaspoons prepared yellow mustard, 1 teaspoon celery seed, ¼ teaspoon fresh ground black pepper. 
  3. Cover and chill for at least 2 hours before serving to let flavors blend.


Cold Mustard Sauce

  1. Prepare gluten free mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1 cup mayonnaise, ½ cup sour cream, 3 tablespoons prepared yellow mustard and 2 teaspoons granulated white sugar.
  3. Cover and chill for at least 4 hours before serving to let flavors blend.


Cranberry Dressing

  1. Prepare gluten free mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1 cup mayonnaise, ¼ cup pureed cranberry sauce and ¼ teaspoons poppy seeds.  
  3. Cover and chill for at least 4 hours before serving to let flavors blend.
  4. Stir dressing into fruit salad of your choice.


Cream Fruit Salad Dressing

  1. Prepare gluten free mayonnaise as directed in key recipe.
  2. In a chilled bowl with chilled beaters, whip ¼ cup cold heavy cream until soft peaks form.
  3. Add 2 tablespoon orange juice, pinch of salt, dash paprika, and then whip until stiff peaks form.
  4. Into ½ cup mayonnaise, fold in the whipped cream mixture.
  5. Stir dressing into fruit salad of your choice.


Creamy Caesar Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1/3 cup cold pressed virgin olive oil, 1/3 cup grated fresh Parmesan cheese, ¼ cup mayonnaise, ¼ cup lemon juice, 1 teaspoon anchovy paste, 1 clove minced garlic and ¼ teaspoon fresh ground black pepper.
  3. Cover and chill for at least 2 hours before serving to let flavors blend.


Creamy Cocktail Sauce

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1 cup mayonnaise, ¼ cup lemon juice, 2 tablespoons chile sauce, 1 teaspoon prepared horseradish, ¼ teaspoon dill seed, dash Tabasco™ sauce, dash Worcestershire sauce, and sea salt to taste.
  3. Cover and chill for at least 2 hours before serving to let flavors blend.


Creamy Fruit Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a medium bowl, mix together 1 cup mayonnaise, 1 cup sour cream, 3 tablespoons orange juice, 4 teaspoons granulated white sugar and 3 teaspoons fresh grated orange peel.
  3. Stir dressing into fruit salad of your choice.


Creamy Greek Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 3/4 cup mayonnaise, ¾ cup crumbled feta cheese, 1/4 cup sour cream, 3 tablespoons red wine vinegar, 1 tablespoon scraped onion, 1 clove minced garlic, 2 teaspoons Dijon mustard, 1/8 teaspoon sea salt, dash fresh ground black pepper.
  3. Cover and chill for at least 2 hours before serving to let flavors blend.


Creamy Italian Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1 cup mayonnaise, 2 tablespoons lemon juice, 2 tablespoons white wine vinegar, 1 teaspoon white granulated sugar, ½ teaspoon dried oregano leaves, ½ teaspoon dry mustard, ½ teaspoon paprika, 1/8 teaspoon dried thyme leaves and 2 cloves minced garlic.
  3. Cover and chill for at least 2 hours before serving to let flavors blend.


Creamy Onion Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1 cup mayonnaise, ½ cup sour cream and 2 tablespoons chopped scallions.
  3. Cover and chill for at least 4 hours before serving to let flavors blend.
  4. Serve dressing over green salads, with cooked vegetables, or with meat or seafood salads.


Curried Chutney Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together ½ cup mayonnaise, ¼ cup chutney of your choice, 2 teaspoons lime juice, 1 teaspoon curry powder and ¼ teaspoon sea salt.
  3. Cover and chill for at least 4 hours before serving to let flavors blend.
  4. Serve dressing with meat or seafood salads.


Curried Onion Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1 cup mayonnaise, ½ cup sour cream, 2 tablespoons chopped scallions and ½ teaspoon curry powder.
  3. Cover and chill for at least 4 hours before serving to let flavors blend.
  4. Serve dressing with meat or seafood salads.


Dill Dip

  1. Prepare mayonnaise as directed in key recipe.
  2. In a medium bowl, mix together 1 cup mayonnaise, 1 cup sour cream, 1/4 cup scraped onion, 2 tablespoons minced fresh dill weed and ½ teaspoon sea salt.
  3. Cover and chill for at least 1 hour before serving to let flavors blend.


Fruit Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a chilled bowl with chilled beaters, whip ¼ cup cold heavy cream until stiff peaks form.
  3. Into ½ cup of gluten free mayonnaise, fold in the whipped cream.
  4. Stir dressing into fruit salad of your choice.


Garden Mayonnaise for Fish or Seafood Salads

  1. Prepare mayonnaise as directed in key recipe.
  2. Stir in ½ cup drained, diced fresh tomatoes, ½ cup drained, diced cucumber and 1 teaspoon scraped onion.
  3. Salt to taste.


Golden Dip

  1. Prepare mayonnaise as directed in key recipe.
  2. In a medium bowl, mix together ½ cup mayonnaise, ½ cup sour cream, ½ cup chopped pitted black olives, 2 tablespoons minced fresh chives, 1 teaspoon gluten-free Worcestershire sauce, ½ teaspoon prepared yellow mustard and ½ teaspoon curry powder.
  3. Cover and chill for at least 1 hour before serving to let flavors blend.


Green Goddess Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a food processor or blender mix together until smooth, 1 cup mayonnaise, ½ sour cream, ½ cup chopped fresh parsley, 3 tablespoons chopped fresh chives, 3 tablespoons white wine vinegar, 1 tablespoon lemon juice, 1 clove minced garlic, ¼ teaspoon dried tarragon, ¼ teaspoon sea salt and 2 dashes fresh ground black pepper.
  3. Cover and chill for at least 4 hours before serving to let flavors blend.


Layered Vegetable Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together ¾ cup mayonnaise, 1½ teaspoons lemon juice, 1 teaspoon paprika, 1/8 teaspoon cayenne.
  3. Spread dressing over top of layered vegetable salad, sealing to edges of salad bowl.
  4. Cover and chill for 2 hours before serving to let flavors blend.


Lemon Herb Sauce

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together ¼ cup mayonnaise, 1 tablespoon lemon juice, 1 minced scallion, 1 ½ teaspoons minced fresh parsley and 1 teaspoon minced fresh herb of your choice (basil, cilantro, lavender, mint, rosemary, savory, tarragon or thyme.
  3. Cover and chill for 30 minutes before serving to let flavors blend.


Louis Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a medium bowl, mix together ½ cup mayonnaise, ½ cup sour cream, ¼ cup chile sauce, ¼ cup minced scallions, 1 tablespoon lemon juice.
  3. In a chilled bowl with chilled beaters, whip ¼ cup cold heavy cream until soft peaks form.
  4. Into mayonnaise mixture, fold in the whipped cream.
  5. Cover and chill for at least 2 hours before serving to let flavors blend.
  6. Stir into Crab or Lobster Louis Salad.


Moscow Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1 cup mayonnaise, ½ cup sour cream, 1½ tablespoons chile sauce and 1 teaspoon scraped onion.
  3. Cover and chill for at least 3 hours before serving to let flavors blend.


Mustard Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together ½ cup mayonnaise, ½ cup sour cream, 1 tablespoon minced fresh parsley, 2 teaspoons minced fresh rosemary, 2 teaspoons Dijon mustard, 1 teaspoon lemon juice, dash garlic salt, fresh ground black pepper to taste.
  3. Serve dressing with meat, fish or seafood salads.


Orange Dressing for Fish Salads

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 3 tablespoons mayonnaise, 3 tablespoons sour cream, 1 teaspoon grated fresh orange peel, 1 teaspoon Dijon mustard, 1 teaspoon prepared horseradish, ½ teaspoon garlic salt and 1/8 teaspoon fresh ground black pepper.
  3. Stir in to fish or seafood salad of your choice.


Parmesan Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1 cup mayonnaise, 3 tablespoons Parmesan cheese, 2 tablespoons lemon juice, 2 tablespoons white wine vinegar, 1 teaspoon white granulated sugar, ½ teaspoon dried oregano leaves, ½ teaspoon dry mustard, ½ teaspoon paprika, 1/8 teaspoon dried thyme leaves and 2 cloves minced garlic.
  3. Cover and chill for at least 3 hours before serving to let flavors blend.


Parsley Cheese Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1 cup mayonnaise, ¼ cup shredded cheddar cheese and 1 tablespoon minced fresh parsley.
  3. Cover and chill for at least 4 hours before serving to let flavors blend.
  4. Serve dressing with cooked vegetables, or with meat, fish or seafood salads.


Pink Fruit Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a chilled bowl with chilled beaters, whip ¼ cup cold heavy cream until soft peaks form.
  3. Add 1 tablespoon maraschino syrup, and then whip until stiff peaks form.
  4. Into ½ cup mayonnaise, fold in the whipped cream and 4 minced maraschino cherries.
  5. Stir the dressing into fruit salad of your choice.


Roasted Red Pepper Aïoli

  1. Add 2 cloves minced garlic and ½ cup chopped cold roasted red pepper.
  2. Substitute olive oil for safflower oil.
  3. Prepare mayonnaise as directed in key recipe.


Russian Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together ½ cup mayonnaise, 1½ tablespoons chile sauce and 1 teaspoon scraped onion.
  3. Cover and chill for at least 2 hours before serving to let flavors blend.


Seafood Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1/3 cup mayonnaise, 1/3 cup sour cream, ¼ cup chile sauce, 1 tablespoon lemon juice, ½ teaspoon Dijon mustard, and ½ teaspoon prepared horseradish.
  3. Cover and chill for at least 2 hours before serving to let flavors blend.


Sour Cream Mayonnaise

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together ¼ cup mayonnaise, ¼ cup sour cream, 2 teaspoons minced chives and a dash of fresh ground black pepper.
  3. Cover and chill for at least 2 hours before serving to let flavors blend.


Sour Cream Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a medium bowl, mix together 2/3 cup mayonnaise, ½ cup sour cream, 3 tablespoon lemon juice, 1 teaspoon grated fresh lemon peel, ½ teaspoon Dijon mustard, ½ teaspoon sea salt and 2 teaspoon minced fresh tarragon.
  3. Cover and chill for at least 3 hours before serving to let flavors blend.


Tangy Fish Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together ½ cup mayonnaise, ¼ cup buttermilk, 2 teaspoons granulated white sugar, 1 teaspoon Dijon mustard, ½ teaspoon Tabasco™ sauce.
  3. Cover and chill for at least 2 hours before serving to let flavors blend.


Tartar Sauce

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1 cup mayonnaise, 2 tablespoons dill pickle relish, 1 tablespoon minced scallion and 1 teaspoon lemon juice.
  3. Cover and chill for 30 minutes before serving to let flavors blend.


Thai Style Ginger Sauce

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together ¼ cup mayonnaise, 2 teaspoons minced cilantro, 1 teaspoon minced fresh ginger, 1 teaspoon lime juice, 1 clove minced garlic, ¼ teaspoon sea salt and a dash of fresh ground black pepper.
  3. Cover and chill for 30 minutes before serving to let flavors blend.


Thousand Island Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together ½ cup mayonnaise, 1 tablespoon chile sauce, 1 tablespoon dill relish, 1 chopped hard-cooked egg and ¼ teaspoon paprika.
  3. Cover and chill for 30 minutes before serving to let flavors blend.


Waldorf Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together ½ cup mayonnaise, ½ teaspoon granulated white sugar, ½ teaspoon lemon juice and a dash of fresh ground nutmeg.
  3. In a chilled bowl with chilled beaters, whip ½ cup cold heavy cream until soft peaks form.
  4. Into mayonnaise mixture, fold in the whipped cream.
  5. Stir dressing into Waldorf salad.


Wasabi Mayonnaise

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1/4 cup mayonnaise, ½ teaspoon wasabi powder, dash gluten-free soy sauce. 
  3. Cover and chill for at least 15 minutes before serving to let flavors blend.
