Impossible Taco Pie—Key Recipe to Quick & Easy Gluten Free Dinner Pies

Impossible Taco Pie is our gluten-free take on Bisquick’s™ Impossibly Easy Taco Pie, a quick and easy weeknight meal the whole family enjoys.

There are so many meals you can make with this delicious and satisfying key recipe!

Do you want your Impossible Taco Pie hot and spicy?  Use canned jalapeños or fresh diced jalapeños instead of canned green chiles.

Change up the flavors by using ground turkey, chicken or pork instead of ground beef.

Go further and change up the cheese, too.  Use queso fresco, Monterey jack or a gluten-free shredded Mexican cheese blend.

Make it fun by topping your Impossible Taco Pie with crushed gluten-free tortilla chips and serve with pico de gallo on the side.

Garnish the Impossible Taco pie with traditional taco toppings, shredded lettuce, chopped tomatoes and chopped scallions. Spice it up by serving some salsa on the side or cool it down by dropping a dollop of sour cream or guacamole in the center.

For a complete nutritious meal, serve Impossible Taco Pie garnished with traditional taco toppings, shredded green cabbage, chopped tomatoes, chopped scallions, sliced black olives, and fresh pineapple chunks for dessert.

Impossible Taco Pie

Servings:  6 to 8

Ingredients

1 pound ground beef

1 cup chopped onion

1 tablespoon Homemade Taco Seasoning Recipe

¼ cup fresh cilantro, chopped 

1 can chopped green chiles (4 ounces)

¾ cup Homemade Gluten Free Biscuit Mix

1 ¼ cups milk (or milk substitute)

1 cup cheddar cheese, shredded

Instructions

  1. Preheat oven to 400°F.
  2. Grease a pie plate, and then set aside.
  3. In a large skillet over medium heat, brown ground beef and cook onion until translucent.
  4. Drain fat from meat mixture.
  5. Stir in taco seasoning, cilantro and green chiles.
  6. Spread meat mixture into prepared pie plate.
  7. In a medium mixing bowl, beat eggs until frothy.
  8. Blend in milk and biscuit mix until smooth.
  9. Pour egg mixture over meat mixture in pie plate.
  10. Spread shredded cheese over top.
  11. Bake for 30 minutes or until knife inserted in center comes out clean.
  12. Remove from oven and let set up 10 minutes before serving.

Variations

Impossible Pie Basic Recipe

Ingredients

  • 1 pound chopped or ground meat of your choice
  • 1 cup chopped onion, cooked
  • 1 teaspoon sea salt
  • 1/8 teaspoon black pepper
  • ¾ cup Homemade Gluten Free Biscuit Mix
  • 1 ¼ cups milk (or milk substitute)

Instructions

  1. In bottom of prepared pie plate, evenly spread 12 slices bacon, crisped and crumbled.
  2. Layer on top of bacon, ½ cup chopped onion and 1 cup shredded cheddar cheese.
  3. Prepare egg mixture as directed in Basic Recipe and pour over filling in pie plate.
  4. Bake as directed in Basic Recipe.


Impossible Barbeque Beef Pie

  1. Prepare as directed in Basic Recipe using ground or chopped beef.
  2. Stir into meat mixture, 1 chopped red bell pepper and 1/3 cup BBQ Sauce—Texas Style.
  3. Prepare egg mixture as directed in Basic Recipe and pour over filling in pie plate.
  4. Sprinkle top with 1 cup shredded cheddar cheese.
  5. Bake as directed in Basic Recipe.


Impossible Cheeseburger Pie

  1. Prepare as directed in Basic Recipe using ground beef.
  2. Prepare egg mixture as directed in Basic Recipe and pour over filling in pie plate.
  3. Spread 1 cup shredded cheese of your choice over top.
  4. Bake as directed in Basic Recipe.


Impossible Chicken & Broccoli Pie

  1. Prepare as directed in Basic Recipe using chopped chicken meat.
  2. Stir into meat mixture, 1-12 ounce bag frozen chopped broccoli, thawed and drained.
  3. Prepare egg mixture as directed in Basic Recipe and pour over filling in pie plate.
  4. Sprinkle top with 1 cup shredded cheddar cheese.
  5. Bake as directed in Basic Recipe.


Impossible Chicken Bleu Cheese Pie

  1. Prepare as directed in Basic Recipe using chopped chicken meat.
  2. Stir into meat mixture, ½ cup crumbled bleu cheese and 2 teaspoons gluten-free Worcestershire sauce.
  3. Prepare egg mixture as directed in Basic Recipe and pour over filling in pie plate.
  4. Bake as directed in Basic Recipe.
  5. Garnish top with caramelized onion rings.


Impossible Chicken Club Pie

  1. Prepare as directed in Basic Recipe using chopped chicken meat.
  2. Stir into meat mixture, ¼ cup diced cooked ham and ¼ cup crumbled crisp bacon.
  3. Prepare egg mixture as directed in Basic Recipe and pour over filling in pie plate.
  4. Sprinkle top with 1 cup shredded mozzarella cheese.
  5. Bake as directed in Basic Recipe.
  6. Garnish top with 2 cups shredded gluten-free Caesar salad and 1 cup halved fresh cherry tomatoes.


Impossible Chicken Pot Pie

  1. Prepare as directed in Basic Recipe using chopped chicken meat.
  2. Stir into meat mixture, 1 cup frozen peas and carrots and ½ teaspoon dried thyme herb, or ¼ teaspoon ground thyme.
  3. Prepare egg mixture as directed in Basic Recipe and pour over filling in pie plate.
  4. Sprinkle top with 1 cup cheddar cheese.
  5. Bake as directed in Basic Recipe.


Impossible Greek Burger Pie

  1. Prepare as directed in Basic Recipe using ground lamb.
  2. Stir into meat mixture, ½ cup diced roasted red bell peppers and ¼ teaspoon red peppers.
  3. Prepare egg mixture as directed in Basic Recipe and pour over filling in pie plate.
  4. Sprinkle top with ½ cup crumbled feta cheese.
  5. Bake as directed in Basic Recipe.


Impossible Ham & Swiss Cheese Pie

  1. In bottom of prepared pie plate, evenly spread 1 ½ cups chopped cooked ham.
  2. Layer on top of ham, ½ cup chopped scallions and 1 cup shredded cheddar cheese.
  3. Prepare egg mixture as directed in Basic Recipe and pour over filling in pie plate.
  4. Bake as directed in Basic Recipe.
  5. Garnish top with sliced fresh tomato and fresh green pepper rings.


Impossible Pie Muffins

  1. Grease a standard muffin tin.
  2. Prepare the meat mixture from the Impossible Pie variation of your choice as directed in the recipe.
  3. Place ¼ cup meat or filling mixture in each muffin cup.
  4. Prepare egg mixture as directed in Basic Recipe and pour 2 tablespoons over filling in each muffin cup.
  5. Sprinkle tops with shredded cheese, if called for in recipe variation.
  6. Bake for 15 to 20 minutes or until toothpick inserted in center comes out clean.
  7. Remove from oven and let set up 10 minutes before serving.


Impossible Pizza Pie

  1. Cover bottom of prepared pie dish with sliced pepperoni.
  2. Layer on top of pepperoni, 2/3 cup chopped onion and 1 cup shredded mozzarella.
  3. Prepare egg mixture as directed in Basic Recipe and pour over filling in pie plate.
  4. Bake as directed in Basic Recipe.
  5. Garnish top with warmed pizza sauce and grated Parmesan Cheese.


Impossible Salmon & Asparagus Pie

  1. In bottom of prepared pie dish, evenly spread 1 pound chopped fresh asparagus spears, 1 cup chopped cooked salmon and ¼ cup chopped scallions.
  2. Layer on top of filling, 1 cup shredded Swiss cheese.
  3. Prepare egg mixture as directed in Basic Recipe and pour over filling in pie plate.
  4. Bake as directed in Basic Recipe.


Impossible Spinach Feta Pie

  1. In bottom of prepared pie plate, layer 2 cups fresh baby spinach leaves, ¼ cup chopped scallions and ½ cup crumbled feta cheese.
  2. Prepare egg mixture as directed in Basic Recipe and pour over filling in pie plate.
  3. Bake as directed in Basic Recipe.


Impossible Tamale Pie

  1. Prepare as directed in Impossible Taco Pie key recipe.
  2. Stir into meat mixture, 1 chopped fresh green bell pepper, 1 cup sliced black olives, and 1 cup frozen corn.
  3. Prepare egg mixture as directed in Impossible Taco Pie Recipe and pour over filling in pie plate.
  4. Sprinkle top with 1 cup shredded cheddar cheese.
  5. Bake as directed in Impossible Taco Pie Recipe.


Impossible Vegetable Pie

  1. Prepare egg mixture as directed in Basic Recipe.
  2. Stir into egg mixture, 2 cups chopped cooked vegetable of your choice, 1/3 cup chopped cooked onion and 1/3 cup chopped cooked red bell pepper.
  3. Reduce salt to ½ teaspoon.
  4. Pour egg and vegetable mixture into prepared pie plate.
  5. Sprinkle top with 1 cup shredded cheddar cheese.
  6. Bake as directed in Basic Recipe.


Slow Cookery

  1. Prepare ingredients according to Impossible Taco Pie variation of choice, except put into a greased slow cooker crock instead of a pie plate.
  2. Cover and cook on high for 1 hour or on low for three hours.
