Sour Cream Coffee Cake Recipe--Gluten Free

Streusel Filling and Topping Ingredients:
- 1/2 cup dark brown sugar
- 1/2 cup chopped nuts
- 1 1/2 teaspoons ground cinnamon

Streusel Filling and Topping Instructions:
1. In a small mixing bowl, stir together all ingredients until well combined, and then set aside.

Coffee Cake Batter Ingredients:
- 1 1/2 cups White Gluten Free Flour Blend
- 2 teaspoons Homemade Gluten-free Baking Powder
- 1/2 teaspoon salt
- 1/4 cup butter, softened (or shortening)
- 3/4 cup granulated white sugar
- 2 eggs, beaten (or equivalent egg replacer)
- 1/2 cup sour cream
- 1 teaspoon Homemade Vanilla Extract

Coffee Cake Batter Instructions:
1. Preheat oven to 350°F.
2. Grease a 9 inch square baking dish and dust with White Gluten Free Flour Blend.
3. In a medium mixing bowl, sift together flour, baking powder and salt, and then set aside.
4. In a large mixing bowl, cream together butter and sugar.
5. Blend in eggs.
6. Add flour mixture, sour cream and vanilla extract, and blend just until batter is fluffy; DO NOT OVER BEAT.
7. Evenly spread 1/2 of coffee cake batter into bottom of prepared baking dish.
8. Sprinkle 1/2 of streusel filling over coffee cake batter.
9. Carefully spread 1/2 of coffee cake batter over top of streusel filling.
10. Garnish top of coffee cake batter with remaining streusel topping.
11. Bake for 30 to 40 minutes or until toothpick inserted in center comes out clean.
12. Remove from oven and let set up for 10 minutes.
13. Slice into servings and serve warm.

Shoo-Fly Coffee Cake

  1. Prepare streusel filling and topping as directed in key recipe.
  2. Prepare coffee cake dry ingredients as directed in key recipe.
  3. Omit granulated white sugar.
  4. In a large mixing bowl, cream together 1/4 cup softened butter, 1/2 cup dark brown sugar and 1/4 cup molasses.
  5. Finish preparing coffee cake batter as directed in key recipe.
  6. Evenly spread 1/2 of coffee cake batter into bottom of prepared baking dish.
