Streusel Ingredients:
- 1/2 cup dark brown sugar
- 2 tablespoons Whole Grain Gluten Free Flour Blend
- 2 teaspoons ground cinnamon
- 2 tablespoons butter, melted
- 1/2 cup chopped nuts

Streusel Instructions:
1. In a medium mixing bowl, stir together all ingredients until well combined, and then set aside.

Coffee Cake Batter Ingredients:
- 1 1/2 cups White Gluten Free Flour Blend
- 2 teaspoons Homemade Gluten-free Baking Powder
- 1/2 teaspoon salt
- 1/4 cup butter, softened (or shortening)
- 3/4 cup granulated white sugar
- 2 eggs, beaten (or equivalent egg replacer)
- 1/2 cup milk (or milk substitute)

Coffee Cake Batter Instructions:
1. Preheat oven to 350°F.
2. Grease a 9 inch square baking dish and dust with White Gluten Free Flour Blend.
3. In a medium mixing bowl, sift together flour, baking powder and salt, and then set aside.
4. In a large mixing bowl, cream together butter and sugar.
5. Blend in the eggs.
6. Add flour mixture and milk, and blend just until batter is fluffy; DO NOT OVER BEAT.
7. Evenly spread 1/2 of coffee cake batter into bottom of prepared baking dish.
8. Sprinkle 1/2 of streusel over coffee cake batter.
9. Carefully spread 1/2 of coffee cake batter over top of streusel.
10. Garnish top of coffee cake batter with remaining streusel.
11. Bake for 25 to 35 minutes or until toothpick inserted in center comes out clean.
12. Remove from oven and let set up for 10 minutes.
13. Slice into servings and serve warm.

  1. To streusel, add 1/4 teaspoon ground nutmeg.

  3. Omit milk.
  4. To wet ingredients, blend in 1/2 cup eggnog.
  5. Prepare coffee cake batter as directed in key recipe.

Fruit Streusel Coffee Cake

  1. In a medium saucepan, combine 2 cups chopped apples, apricots, peaches, pineapple or whole blueberries and 1/2 cup water.
  2. Cover saucepan and simmer fruit for 5 minutes.
  3. Stir in 1 tablespoon lemon juice.
  4. In a small bowl, combine 2/3 cup granulated white sugar and 2 tablespoons potato starch.
  5. Stir starch mixture into hot fruit mixture.
  6. Cook, stirring constantly until mixture bubbles and thickens.
  7. Remove from heat and set aside to cool.
  8. Prepare streusel as directed in key recipe.
  9. Prepare coffee cake batter as directed in key recipe.
  10. Evenly spread 1/2 of coffee cake batter into bottom of prepared baking dish.

  1. To streusel, add 1 tablespoon instant coffee granules (or espresso crystals) and 2/3 cups gluten-free semisweet miniature chocolate chips.
  2. To coffee cake dry ingredients, add 1 teaspoon ground cinnamon.
  3. To coffee cake wet ingredients, add 1/2 teaspoon gluten-free almond extract.
  4. Omit milk.
  5. Blend in 1/2 cup sour cream.
  6. Prepare coffee cake batter as directed in key recipe.
  7. Layer and bake coffee cake as directed in key recipe.


Orange Date Coffee Cake

  1. Prepare streusel as directed in key recipe.
  2. To coffee cake dry ingredients, stir in 2 tablespoons grated fresh orange peel or 2 teaspoons dry grated orange peel.
  3. Omit milk.
  4. To wet ingredients, blend in 1/2 cup orange juice.
  5. Finish preparing coffee cake batter as directed in key recipe.
  6. Stir in 1/2 cup chopped pitted dates.
  7. Layer and bake coffee cake as directed in key recipe.


Streusel Coffee Cake with Sour Cream Topping
