Perfect! That is what this gluten-free Blueberry Crisp recipe is; the perfect dessert for elegant dinner parties, picnics, potlucks, cookouts and campfire treats!

Prep Time: 25 minutes
Cook Time: 40 minutes
Yield: 9 servings

Blueberry Filling

Ingredients:
- 4 cups fresh or frozen blueberries
- 1 cup granulated white sugar
- 1/4 cup precooked granulated tapioca
- 1 tablespoon lemon juice
- 1/2 teaspoon ground cinnamon
- dash salt

Instructions:
1. Preheat oven to 350°F.
2. In a large mixing bowl, combine blueberries, sugar, tapioca, lemon juice, ground cinnamon and salt.
3. Evenly spread blueberry filling in an ungreased 8 inch square baking dish.

Fruit Crisp Topping

Ingredients:
- 1 cup granulated white sugar
- 3/4 cup Whole Grain Gluten Free Flour Blend
- 1 teaspoon ground cinnamon
- dash salt
- 1/3 cup cold butter

Instructions:
1. In a medium mixing bowl, combine sugar, flour, cinnamon and salt.
2. Add butter and cut in until mixture turns into a crumble.
3. Sprinkle evenly over blueberry filling.
4. Bake for 40 minutes or until top is golden brown and filling is bubbling.
5. Remove from oven and let set up for 15 minutes.
6. Serve warm with cream, fresh whipped cream or serve cold with a scoop of vanilla ice cream.

Metric Measurements--Blueberry Filling

Note:  use volume-based imperial/metric measuring spoons and dry measuring cups marked in milliliters; see Kitchen Equipment and Tools.

Ingredients

  • 1 liter fresh or frozen blueberries
  • 250 ml granulated white sugar
  • 60 ml precooked granulated tapioca
  • 15 ml lemon juice
  • 2.5 ml ground cinnamon
  • dash salt

Instructions

  1. Preheat oven to 180°C, Gas Mark 4.
  2. In a large mixing bowl, combine blueberries, sugar, tapioca, lemon juice, ground cinnamon and salt.
  3. Evenly spread blueberry filling in an ungreased 20 cm square baking dish.


Metric Measurements--Fruit Crisp Topping

Ingredients

  • dash salt
  • 85 ml cold butter

  4. Bake for 40 minutes or until top is golden brown and filling is bubbling.

Slow Cookery

  1. Prepare blueberry filling as directed in key recipe.
  2. Evenly spread blueberry filling in the bottom of an ungreased slow cooker crock.
  3. Prepare topping as directed in key recipe.
  4. Sprinkle topping evenly over blueberry filling.
  5. Cover and cook on Low for 5 to 6 hours.
