Saucy and Spicy! If you want a gluten-free classic Chili Con Carne recipe to satisfy your craving, then is the one you are looking for. I kid you not; it is the best ever!

Prep Time: 15 minutes
Cook Time: 30 minutes
Yield: 4 servings

Ingredients:
- 1 pound ground meat (beef, buffalo, chicken, pork, sausage, turkey, venison or other ground meat)
- 1 large onion, chopped; reserve 1/2 for garnish
- 1 large bell pepper, diced
- 2 button mushrooms, minced
- 1 tablespoon gluten-free chili powder
- 2 teaspoons ground cumin
- 1 teaspoon dried basil
- 1 teaspoon dried Mexican oregano
- 1/4 teaspoon black pepper
- 1 tablespoon garlic, minced
- 1/2 cup dry red wine
- 1 tablespoon gluten-free Worcestershire sauce
- 1 tablespoon Tabasco™ Green Pepper Sauce
- 4 ounces canned diced green chiles
- 1 cup gluten-free ketchup
- 1/2 cup water
- 15 ounce canned kidney beans, drained and rinsed

Instructions:
1. In a Dutch oven over medium high heat, brown ground meat, onion, bell pepper and mushrooms, about 10 minutes.
2. Stir in chili powder, cumin, salt, basil, oregano and black pepper, and cook for 1 minute to bloom seasonings.
3. Stir in garlic and cook for 30 seconds.
4. Stir in red wine and Worcestershire sauce, and cook for 1 minute, scraping fond from bottom of pot.
5. Stir in Tabasco™ Green Sauce, green chiles, ketchup, water and kidney beans, and simmer until heated through.
6. To serve, spoon Chili Con Carne into soup bowls.
7. Garnish with grated cheese and reserved chopped onion.

Variations

Barbecue Chili Con Carne Recipe

  1. Omit ketchup.
  2. Stir in 1 cup (250 ml) Homemade BBQ Sauce recipe.
  3. Cook as directed in key recipe.


Barbecue Chili Biscuit Casserole

  1. Prepare as directed in Barbecue Chili Con Carne variation.
  2. Remove from heat, cover and set aside.
  3. Preheat oven to 400°F (200°C, Gas Mark 6).
  4. Prepare 1 recipe gluten-free Biscuits variation of your choice.
  5. Spoon hot chili into bottom of a greased 3 quart (2.8 liters) casserole dish.
  6. Spread gluten-free biscuit dough over top of chili filling.
  7. Bake for 25 to 30 minutes or until light golden brown.
  8. Remove from oven and let set up for 10 minutes before serving.


Chili and Dumplings

  1. Prepare as directed in key recipe.
  2. Stir in 3 cups (750 ml) beef stock, bring to a boil and reduce to a simmer.
  3. Drop Cornmeal Dumplings dough by tablespoonfuls onto Chili Con Carne mixture.
  4. Cook uncovered for 10 minutes.
  5. Cover and cook for 15 minutes longer.
  6. Serve hot.


Chili and Spaghetti

  1. Prepare as directed in key recipe.
  2. Top cooked gluten-free spaghetti with Chili Con Carne recipe.
  3. Garnish with grated cheese.


Chili Bake Casserole

  1. Prepare as directed in key recipe.
  2. Remove from heat, cover and set aside.
  3. Preheat oven to 400°F (200°C, Gas Mark 6).
  4. Prepare 1 recipe Sweet Gluten Free Cornmeal Muffins.
  5. Spoon hot chili into bottom of a greased 3 quart (2.8 liters) casserole dish.

  2. Stir in beef stock to desired consistency and heat through.
  3. Serve with toasted gluten-free bread sticks or gluten-free tortillas.


Coney Island Hot Dogs

  1. Prepare as directed in Ground Meat Chili variation; use ground beef.
  2. Place warm gluten-free hot dogs in warm gluten-free hot dog buns.
  3. Top each hot dog with a generous spoonful of Ground Meat Chili.
  4. Garnish with chopped onion and prepared yellow mustard.


Ground Meat Chili



  1. Increase ground meat to 1 1/2 pounds (680 g).
  2. Omit beans.
  3. Prepare as directed in key recipe.

Texas Chili Con Carne Recipe

  1. Omit ground meat.
  2. Omit kidney beans.
  3. Add 2 pounds (907 g) tender meat cut up into bite-sized pieces.

Vegan Chili

  1. Omit ground meat.
  2. Increase beans of your choice to 2 cans.
