Chocolate Crinkles Recipe—A Decadent Gluten-free Cookie!


The hardest part about making this delicious recipe, is waiting for the dough to chill! Oh the anticipation!

Prep Time: 3 hours, 15 minutes
Cook Time: 50 minutes
Yield: about 48 cookies

Ingredients:
- 2 cups White Gluten Free Flour Blend
- 1/4 cup potato starch
- 2 teaspoons Homemade Gluten-free Baking Powder
- 1/2 teaspoon salt
- 1/2 cup vegetable oil
- 4 ounces unsweetened baker's chocolate, melted
- 2 cups granulated white sugar
- 4 large eggs (or equivalent egg replacer)
- 2 teaspoons Homemade Vanilla Extract
- 1 cup powdered sugar, gluten-free, corn-free

Instructions:
1. In a medium mixing bowl, stir together flour, potato starch, baking powder and salt, and then set aside.
2. In a large mixing bowl, blend together oil, melted chocolate and sugar.
3. Add one egg at a time, mixing well between additions.
4. Add vanilla extract and mix well.
5. Add flour mixture and mix well.
6. Cover and chill dough at least 3 hours; overnight is best.
7. Preheat oven to 350°F.
8. Line cookie sheets with parchment paper.
9. Place powdered sugar into small bowl.
10. Dough softens rapidly at room temperature, so work quickly; using a cookie scoop, drop 1 scoop of cookie dough into powdered sugar, roll until covered.
11. Place 2 inches apart on prepared cookie sheet.
12. Chill cookie dough between batches.
13. Bake for 10 to 12 minutes.
14. Do not overbake; cookies will look slightly underdone!
15. Cool completely on cookie sheet before removing.

Chocolate Spice Crinkles

  1. To flour mixture add 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground ginger and 1/4 teaspoon ground cloves.
  2. Prepare, chill and bake as directed in key recipe.

Mexican Chocolate Crinkles

  1. To flour mixture add 1 teaspoon ground cinnamon and a pinch of ground black pepper.
  2. Prepare dough as directed in key recipe.
  3. Chill and bake as directed in key recipe.


Mint Chocolate Crinkles

  1. With vanilla extract, stir in 1 teaspoon gluten-free peppermint extract.
  2. Prepare, chill and bake as directed in key recipe.
  3. If desired, garnish top of each hot cookie with crushed peppermint candy.
  4. Cool completely on cookie sheet before removing.


Mocha Crinkles

  1. To flour mixture add 1 tablespoons instant coffee powder.
  2. Prepare dough as directed in key recipe.
  3. Chill and bake as directed in key recipe.


Nut Spice Chocolate Crinkles

  1. To flour mixture add 1/2 teaspoon ground cinnamon, 1/2 teaspoon ground ginger and 1/4 teaspoon ground cloves.
  2. Prepare dough as directed in key recipe.
  3. Stir in 1/2 cup chopped nuts.
  4. Chill and bake as directed in key recipe.
