What are Cornish game hens?
Cornish game hens are specially bred miniature chickens originating from Cornwall in England.
Also known as Indian Game, Cornish Hens or Rock Cornish Hens (a cross between Cornish and Rock chickens), they are domestically produced and weigh 1 1/2 to 2 (680 to 907 grams) each.
Each cooked hen will feed one or two people, depending on the extent of the meal served with it.

Cornish Game Hen Recipe
To create an elegant affair, serve this Cornish game hen recipe with a fine white wine, such as Chablis, Chardonnay or Riesling.

Yield: 2 to 4 servings
2 Cornish game hens, fresh or thawed, about 1 1/2 pounds to 2 pounds each
melted butter (shortening or oil)
1. Preheat oven to 375°F.
2. Remove giblets and neck.
3. Rinse hens and pat dry.
4. Lightly rub cavities with salt.
5. Place hens breast side up in a roasting pan with rack, and then brush with melted butter.
6. Roast uncovered for 1 1/2 hours, basting hens 3 to 4 times with melted butter.
Note: use volume-based imperial/metric measuring spoons and dry measuring cups marked in milliliters; see Kitchen Equipment and Tools .
4 Cornish game hens, fresh or thawed, about 680 to 900 grams each salt melted butter (shortening or oil)
Preheat oven to 190°C, Gas Mark 5. Remove giblets and neck. Rinse hens and pat dry. Lightly rub cavities with salt. Place hens breast side up in a roasting pan with rack, and then brush with melted butter. Roast uncovered for 1 1/2 hours, basting hens 3 to 4 times with melted butter.
Remove giblets and neck from 2 cornish game hens. Rinse hens and pat dry. Lightly rub cavities with salt. Place both hens in bottom of slow cooker, breast side up. Dot tops with butter. Cover and cook on High for 4 hours, or on Low for 6 hours, or on High 1 hour, and then on low for 8 hours.
