What are Cornish game hens?

Cornish game hens are specially bred miniature chickens originating from Cornwall in England.

Also known as Indian Game, Cornish Hens or Rock Cornish Hens (a cross between Cornish and Rock chickens), they are domestically produced and weigh 1 1/2 to 2 pounds each.

Each cooked hen will feed 1 or 2 people, depending on the extent of the meal served with it.

To create an elegant affair, serve this Cornish game hen recipe with a fine white wine, such as Chablis, Chardonnay or Riesling.

Prep Time: 15 minutes
Cook Time: 1 1/2 hours
Yield: 2 to 4 servings

Ingredients:
- 2 Cornish game hens, fresh or thawed, about 1 1/2 pounds to 2 pounds each
- salt
- melted butter (shortening or oil)

Instructions:
1. Preheat oven to 375°F.
2. Remove giblets and neck.
3. Rinse hens and pat dry.
4. Lightly rub cavities with salt.
5. Place hens breast side up in a roasting pan with rack, and then brush with melted butter.
6. Roast uncovered for 1 1/2 hours, basting hens 3 to 4 times with melted butter.

Variations

Metric Measurements

Note:  use volume-based imperial/metric measuring spoons and dry measuring cups marked in milliliters; see Kitchen Equipment and Tools.

  • 4 Cornish game hens, fresh or thawed, about  680 to 900 grams each
  • salt
  • melted butter (shortening or oil)

Instructions

  1. Preheat oven to 190°C, Gas Mark 5.
  2. Remove giblets and neck.
  3. Rinse hens and pat dry.
  4. Lightly rub cavities with salt.
  5. Place hens breast side up in a roasting pan with rack, and then brush with melted butter.
  6. Roast uncovered for 1 1/2 hours, basting hens 3 to 4 times with melted butter.


Microwave Magic

  1. Remove giblets and neck from 1 Cornish game hen.
  2. Rinse Cornish game hen and pat dry.
  3. Lightly rub cavity with salt.
  4. Place hen in a 2 quart casserole dish, breast side down, and then brush with melted butter.
  5. Cover with heavy plastic wrap.
  6. Cook in microwave oven on Full Power for 5 to 6 minutes per pound or until temperature registers in a meat thermometer, 170°F in meatiest part of thigh and 175°F in meatiest part breast.
  7. To cook game hen evenly, turn game hen 2 or 3 times during cooking time and finish cook with breast side up.
  8. Remove from microwave oven, cover with aluminum foil and let stand for 10 to 15 minutes before serving.


Slow Cookery

  1. Remove giblets and neck from 2 cornish game hens.
  2. Rinse hens and pat dry.
  3. Lightly rub cavities with salt.
  4. Place both hens in bottom of slow cooker, breast side up.
  5. Dot tops with butter.
  6. Cover and cook on High for 4 hours, or on Low for 6 hours, or on High 1 hour, and then on low for 8 hours.
