Gluten Free Beef Stroganoff

Gluten Free Beef Stroganoff is a delicious homemade blue plate special you will be proud to serve to your loved ones.

Dinner ideas can be challenge, especially for folks on a gluten-free diet and easy dinner recipes are a requirement for busy work nights.

There is a reason cooks turn to ground beef recipes first; they are quick and simple.

While ground beef recipes abound, pasta remains a family favorite.

These two basic ingredients make a great culinary palette.

Raid the pantry and the spice cabinet; toss in a few things from the refrigerator and before you know it, you have come up with a fun new recipe (or a twist on an old favorite) that is fast and tasty.

That is what I did with this recipe.

When I discovered the beef stroganoff seasoning packets I purchased from the store contained gluten, I worked to come up with the right flavor combination to replicate our favorite ground beef based weeknight staple.

After much experimenting, I threw out the white wine, tomato paste, wheat flour and cayenne pepper, along with other ingredients imparting "complex flavor".

Believe it or not, my family preferred the pure, simple flavor from the essential ingredients:  ground beef, salt, pepper, onion, garlic, mushrooms and sour cream.

Together, these ingredients make a winning combination of fantastic flavor!

Add steamed broccoli and a tossed green salad using Romaine lettuce, sliced tomato and watercress to make an elegant meal.

Prep Time: 10 minutes
Cook Time: 20 minutes
Yield: 4 Servings

Ingredients:
- 1 pound lean ground beef
- 8 ounces fresh mushrooms, coarsely chopped
- 1 cup onion, chopped
- 1 clove of garlic, minced
- 1 teaspoon salt
- 1/8 teaspoon black pepper
- 1 1/2 cups sour cream
- 8 ounces gluten free fusilli
- fresh parsley

Instructions:
1. In a large saucepan, heat water to boiling.
2. Place lean ground beef in a Dutch oven.
3. Place mushrooms and onions on top of ground beef.
4. Add gluten-free fusilli to boiling water and cook according to package directions.
5. Over medium-high heat, brown the ground beef mixture.
6. Add garlic, salt and black pepper; cook for 30 seconds.
7. Off-heat, stir in sour cream.
8. Drain gluten-free fusilli.
9. Serve stroganoff over hot gluten-free fusilli.
10. Garnish with a few sprigs of fresh parsley.

Variations

Metric Measurements

Note:  use volume-based imperial/metric measuring spoons and dry measuring cups marked in milliliters; see Kitchen Equipment and Tools.

Ingredients

  • 1 to 1 1/2 liters water
  • 450 grams lean ground beef
  • 225 grams fresh mushrooms, coarsely chopped
  • 250 ml onion, chopped
  • 1 clove of garlic, minced
  • 5 ml salt
  • 0.5 ml black pepper
  • 375 ml sour cream
  • 225 grams gluten-free fusilli
  • fresh parsley

Instructions

  1. In a large saucepan, heat water to boiling.
  2. Place lean ground beef in a Dutch oven.
  3. Place mushrooms and onions on top of ground beef.
  4. Add gluten-free fusilli to boiling water and cook according to package directions.
  5. Over medium-high heat, brown the ground beef mixture.
  6. Add garlic, salt and black pepper; cook for 30 seconds.

Microwave Magic

  1. Place mushrooms and onion in a large microwave safe dish and cook in microwave oven on Full Power for 2 minutes or until mushrooms and onion are tender.
  2. Add ground beef and cook on Full Power for 3 to 4 minutes or until beef is no longer pink; stir halfway through cooking time.
  3. Drain off liquid.
  4. Add garlic, salt and black pepper; cook on Full Power for 15 seconds.
  5. Stir in sour cream and heat on Full Power for 1 minute.
  6. Serve stroganoff over hot gluten-free fusilli.
  7. Garnish with a few sprigs of fresh parsley.


Slow Cookery

  1. Place lean ground beef in a large skillet.
  2. Place mushrooms and onions on top of ground beef.
  3. Over medium-high heat, brown the ground beef mixture.
  4. Add garlic, salt and black pepper; cook for 30 seconds.
  5. Add ground beef mixture to slow cooker.
  6. Stir in sour cream.
  7. Cover and cook on low for 4 to 6 hours.
  8. Serve stroganoff over hot gluten-free fusilli.
  9. Garnish with a few sprigs of fresh parsley.
