Use this gluten free quiche recipe to create your own delicious savory custard pie (Bamboo Shoots and Morel Mushrooms Quiche).

Prep Time: 25 minutes
Cook Time: 50 minutes
Yield: 6 to 8 servings

Ingredients:
- gluten-free pie crust for bottom crust only, prebaked and cooled
- 4 large eggs, room temperature
- 2 cups heavy cream
- 3/4 teaspoon salt
- 1/4 teaspoon granulated white sugar
- 1/8 teaspoon ground cayenne

Instructions:
1. Preheat oven to 325°F.
2. In a large mixing bowl, beat eggs until frothy.
3. Add cream salt, sugar and cayenne, and then beat until well mixed.
4. Pour egg mixture into pastry lined pie plate.
5. Bake for 45 to 50 minutes or until knife inserted near center comes out clean.
6. Remove from oven and let stand for 10 to set up before cutting and serving.
7. Can be served at room temperature.

Variations

Asparagus Quiche

Ingredients

  • Traditional Gluten Free Pie Crust for bottom crust only, prebaked and cooled
  • 1 pound fresh asparagus spears cut into 1 inch long pieces
  • 2 tablespoons butter (oil or shortening)
  • 1/4 teaspoon dried dill weed

Instructions

  1. In a large skillet, sauté asparagus in butter just until tender crisp.
  2. Drain liquid and fat.
  3. Layer asparagus in bottom of pastry lined pie plate.
  4. Prepare quiche filling as directed in key recipe.
  5. Stir in dried dill weed until well blended.
  6. Pour quiche filling over asparagus.
  7. Bake and let set as directed in key recipe.


Broccoli Quiche

Ingredients

  • Traditional Gluten Free Pie Crust for bottom crust only, prebaked and cooled
  • 1 pound fresh broccoli, cut into flowerets
  • 2 tablespoons butter (oil or shortening)
  • 1 small onion, thinly sliced
  • 1 cup shredded Swiss cheese

Instructions

  1. In a large skillet, sauté broccoli in butter just until tender crisp.
  2. Drain liquid and fat.
  3. Layer broccoli, onion and cheese in bottom of pastry lined pie plate.

Crustless Gluten Free Quiche Recipe



  1. Prepare any quiche variation, without crust, as directed in key recipe.
  2. Bake for 20 to 30 minutes or until knife inserted near center comes out clean.
  3. Let set as directed in key recipe.


Dairy-free Quiche

  1. Omit heavy cream.
  2. Add milk substitute.
  3. Prepare and bake quiche as directed in key recipe.


Egg-free Quiche

  1. Omit eggs.
  2. In a large mixing bowl, beat 2 tablespoons egg replacer, cream, salt, sugar and cayenne until well mixed.
  3. Prepare and bake quiche as directed in key recipe.


Individual Crustless Quiches

  1. Prepare any quiche variation, without crust, as directed, except use 4, 10 ounce glass custard cups instead of a pie plate.
  2. Bake for 20 to 30 minutes or until knife inserted near center comes out clean.
  3. Let set as directed in key recipe.


Metric Measurements

Ingredients

  • 3.75 ml salt
  • 1.25 ml granulated white sugar

  1. Preheat oven to 160°C, Gas Mark 3.

  3. Add cream salt, sugar and cayenne, and then beat until well mixed.

Onion and Caraway Quiche

Ingredients

  • Traditional Gluten Free Pie Crust for bottom crust only, prebaked and cooled
  • 3 medium onions, sliced thin
  • 3 tablespoons butter (oil or shortening)
  • 1 tablespoon whole caraway seeds
  • 1 cup jack cheese, shredded

Instructions

  1. In a large skillet, sauté onion in butter just until turning golden brown.
  2. Layer onion in bottom of pastry lined pie plate.
  3. Evenly sprinkle caraway seed over onion.
  4. Layer jack cheese over caraway seeds.
  5. Prepare quiche filling as directed in key recipe.
  6. Pour quiche filling over onion and caraway seeds.
  7. Bake and let set as directed in key recipe.


Quiche Appetizer



  1. Prepare pastry for a single crust pie and cut into 2 1/2 inch circles using a round cookie cutter.
  2. Line mini muffin pan cups with pastry circles.
  3. Fill pastry cups with desired variation and quiche filling.
  4. Bake for 20 to 30 minutes or until toothpick inserted near center comes out clean.

  6. Serve warm or cold.
  7. Can be made ahead of time and frozen; thaw completely before reheating in oven.


Quiche Lorraine


Ingredients

  • 12 slices cooked bacon, crumbled
  • 1/3 cup onion, minced
  • 1 cup shredded Swiss cheese

Instructions

  1. Layer bacon, onion and cheese in bottom of pie crust lined pie plate.
  2. Prepare quiche filling as directed in key recipe.
  3. Pour quiche filling over bacon, onion, cheese mixture in pie dish.
  4. Bake and let set as directed in key recipe.


Seafood Quiche

Ingredients

  • Traditional Gluten Free Pie Crust for bottom crust only, prebaked and cooled
  • 1/2 to 1 pound cooked crab or cooked shrimp
  • 1 small onion, thinly sliced
  • 1 cup shredded Swiss cheese

Instructions

  1. Layer crab or shrimp, onion and cheese in bottom of pastry lined pie plate.

  • 1 cup shredded cheddar cheese

  1. Layer spinach bacon, onion and cheese in bottom of pie crust lined pie plate.

  3. Pour quiche filling over bacon, onion, cheese mixture in pie dish.

Spinach and Feta Quiche

Ingredients

  • Traditional Gluten Free Pie Crust for bottom crust only, prebaked and cooled
  • 3 cups fresh baby spinach leaves, rough chopped
  • 2 tablespoons fresh parsley, minced
  • 1/4 pound feta cheese, crumbled
  • 3 tablespoons fresh grated Parmesan or Romano cheese

Instructions

  1. Layer spinach, parsley and cheese in bottom of pie crust lined pie plate.
