Outstanding! These Gluten Free Sausage Balls are just like the yummy appetizer you remember; your guests will rave!

Prep Time: 10 minutes
Cook Time: 25 minutes
Yield: about 3 dozen

Ingredients:
- 3 cups Whole Grain Gluten Free Biscuit Mix
- 1 pound gluten-free ground pork sausage
- 1 pound cheddar cheese, shredded
- 1/2 cup grated Parmesan cheese
- 1/2 cup milk
- 1/2 teaspoon dried rosemary leaves, crushed
- 1 1/2 teaspoons minced fresh parsley or 1/2 teaspoon dried parsley

Instructions:
1. Preheat oven to 350°F.
2. Line a broiler pan with non-stick foil.
3. In a large mixing bowl, combine all ingredients.
4. Using a 1 inch cookie scoop, scoop even portions of sausage mixture and roll into balls with your hands.
5. Place sausage balls in prepared pan.
6. Bake for 25 to 30 minutes or until sausage balls are browned.
7. Immediately remove sausage balls to serving dish.
8. Serve hot with warm BBQ Sauce--Texas Style.

Variations

Gluten Free Sausage Balls with Apple

  1. Add 2 cups tart apple, shredded.
  2. Add 1/2 teaspoon smoked paprika.
  3. Prepare and bake as directed in key recipe.
  4. Serve with warm Apple Cider Sauce.


Gluten Free Ham & Cheese Balls

  1. Omit gluten-free pork sausage.
  2. Add 1 1/2 cups cooked gluten-free ham, minced fine or ground.
  3. Increase parsley measure to 3 tablespoons minced fresh, or 1 tablespoon dried.
  4. Increase milk measure to 2/3 cup.
  5. Prepare and bake as directed in key recipe.
  6. Serve hot with Peppery Pineapple Sauce.


Herbed Gluten Free Sausage Balls

  1. Add 1/3 cup minced onion.
  2. Add 1 teaspoon garlic powder.
  3. Add 1/4 teaspoon hot pepper sauce.
  4. Prepare and bake as directed in key recipe.
  5. Serve hot with chilled Buttermilk Dressing.


Italian Gluten Free Sausage Balls

  1. Omit ground pork sausage.
  2. Add bulk gluten-free Italian sausage.
  3. Omit cheddar cheese.
  4. Add mozzarella cheese.
  5. Add 2 teaspoons Italian seasoning.
  6. Prepare and bake as directed in key recipe.
  7. Serve hot with warm Red Wine Sauce or Marinara Sauce.


Metric Measurements

Note:  use volume-based imperial/metric measuring spoons and dry measuring cups marked in milliliters; see Kitchen Equipment and Tools.

Ingredients

  • 454 grams gluten-free ground pork sausage
  • 454 grams cheddar cheese, shredded
  • 125 ml grated Parmesan cheese
  • 125 ml milk
  • 2.5 ml teaspoon dried rosemary leaves, crushed
  • 7.5 ml teaspoons minced fresh parsley or 1/2 teaspoon dried parsley

Instructions

  1. Preheat oven to 180°C, Gas Mark 4.
  2. Line a broiler pan with non-stick foil.
  3. In a large mixing bowl, combine all ingredients.
  4. Using a 2.54 cm cookie scoop, scoop even portions of sausage mixture and roll into balls with your hands.
  5. Place sausage balls in prepared pan.
  6. Bake for 25 to 30 minutes or until sausage balls are browned.
  7. Immediately remove sausage balls to serving dish.
  8. Serve hot with a dipping sauce.


Stuffed Sausage Balls

  1. Prepare sausage mixture as directed in key recipe.
  2. Shape sausage mixture around a cube of cheese, a dill pickle chunk or a stuffed olive.
  3. Bake as directed in key recipe.
  4. Serve with a complementary dipping sauce.


Turkey or Chicken Sausage Balls

  1. Omit ground pork sausage.
  2. Add gluten-free ground turkey or chicken sausage.
  3. Add 1 teaspoon ground sage.
  4. Add 1 teaspoon dried thyme.
  5. Prepare and bake as directed in key recipe.
  6. Serve hot with chilled Grandma's Cranberry Sauce.
