Get creative and add a punch of flavor to your mayonnaise by using different oils, such as olive oil or nut oils, different mustard variations, and ground peppers or chilies.

How to Make Mayonnaise--Key to Gluten-free Dressings, Dips & Sauces


Fantastic!! Simple ingredients and lots of love make this recipe a hit with families.

Prep Time: 10 minutes
Yield: 1 1/2 cups, 24 servings

Ingredients:
- 3 egg yolks (or 1 large egg)
- 2 teaspoons white wine vinegar
- 1 1/2 teaspoon granulated white sugar
- 1 teaspoon lemon juice
- 1/2 teaspoon prepared Dijon mustard
- 1/4 teaspoon salt
- dash ground cayenne
- 1 cup vegetable oil

Instructions:
1. In a food processor or a blender, combine egg yolks, vinegar, sugar, lemon juice, mustard, salt and cayenne.
2. On high speed, very slowly drizzle in oil, processing until an emulsion forms and the mayonnaise thickens.
3. Chill before serving.

Variations

Aïoli

  1. Add 2 cloves minced garlic.
  2. Substitute virgin olive oil for vegetable oil.

Buttermilk Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a medium bowl, combine 1/2 cup mayonnaise, 1/2 cup sour cream, 1/2 cup buttermilk, 1/4 cup tomato juice, 2 tablespoons minced fresh chives, 2 tablespoons fresh grated Parmesan cheese, 1/2 teaspoon dry mustard, 1/4 teaspoon celery seed, 1/4 teaspoon paprika and 1/8 teaspoon garlic powder.  
  3. Cover and chill for at least 2 hours before serving.


Chipotle Aïoli



  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1/2 cup mayonnaise and 1 tablespoon Tabasco™ Chipotle Pepper Sauce.
  3. Cover and chill for at least 30 minutes before serving to let flavors blend.


Chipotle Lime Sauce

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1/4 cup mayonnaise, 1/4 cup sour cream, 3 teaspoons lime juice and 1 teaspoon Tabasco™ Chipotle Pepper Sauce.
  3. Cover and chill for at least 30 minutes before serving.


Classic Cole Slaw Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1/2 cup mayonnaise, 1 tablespoon apple cider vinegar, 2 teaspoons granulated white sugar, 1 teaspoon celery seed and 1/4 teaspoon salt.
  3. Cover and chill for at least 2 hours before serving.


Classic Potato Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a medium bowl, combine 3/4 cup mayonnaise, 1/4 cup sour cream, 6 tablespoons dill pickle juice, 2 teaspoons prepared yellow mustard, 1 teaspoon celery seed, 1/4 teaspoon fresh ground black pepper. 
  3. Cover and chill for at least 2 hours before serving.


Cold Mustard Sauce

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1 cup mayonnaise, 1/2 cup sour cream, 3 tablespoons prepared yellow mustard and 2 teaspoons granulated white sugar.
  3. Cover and chill for at least 4 hours before serving.


Cranberry Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1 cup mayonnaise, 1/4 cup pureed cranberry sauce and 1/4 teaspoons poppy seeds.  
  3. Cover and chill for at least 4 hours before serving.
  4. Stir dressing into fruit salad of your choice.


Cream Fruit Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a chilled bowl with chilled beaters, whip 1/4 cup cold heavy cream until soft peaks form.
  3. Add 2 tablespoon orange juice, pinch of salt, dash paprika, and then whip until stiff peaks form.
  4. Into 1/2 cup mayonnaise, fold in the whipped cream mixture.
  5. Stir dressing into fruit salad of your choice.


Creamy Caesar Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1/3 cup virgin olive oil, 1/3 cup grated fresh Parmesan cheese, 1/4 cup mayonnaise, 1/4 cup lemon juice, 1 teaspoon anchovy paste, 1 clove minced garlic and 1/4 teaspoon fresh ground black pepper.
  3. Cover and chill for at least 2 hours before serving.


Creamy Cocktail Sauce

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1 cup mayonnaise, 1/4 cup lemon juice, 2 tablespoons chile sauce, 1 teaspoon prepared horseradish, 1/4 teaspoon dill seed, dash Tabasco™ sauce, dash Worcestershire sauce, and salt to taste.
  3. Cover and chill for at least 2 hours before serving.


Creamy Fruit Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a medium bowl, combine 1 cup mayonnaise, 1 cup sour cream, 3 tablespoons orange juice, 4 teaspoons granulated white sugar and 3 teaspoons fresh grated orange peel.
  3. Stir dressing into fruit salad of your choice.


Creamy Greek Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 3/4 cup mayonnaise, 3/4 cup crumbled feta cheese, 1/4 cup sour cream, 3 tablespoons red wine vinegar, 1 tablespoon scraped onion, 1 clove minced garlic, 2 teaspoons Dijon mustard, 1/8 teaspoon salt, dash fresh ground black pepper.
  3. Cover and chill for at least 2 hours before serving.


Creamy Italian Dressing



  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1 cup mayonnaise, 2 tablespoons lemon juice, 2 tablespoons white wine vinegar, 1 teaspoon white granulated sugar, 1/2 teaspoon dried oregano leaves, 1/2 teaspoon dry mustard, 1/2 teaspoon paprika, 1/8 teaspoon dried thyme leaves and 2 cloves minced garlic.
  3. Cover and chill for at least 2 hours before serving.


Creamy Onion Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1 cup mayonnaise, 1/2 cup sour cream and 2 tablespoons chopped scallions.
  3. Cover and chill for at least 4 hours before serving.
  4. Serve over green salads, cooked vegetables, or with meat or seafood salads.


Curried Chutney Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1/2 cup mayonnaise, 1/4 cup chutney of your choice, 2 teaspoons lime juice, 1 teaspoon curry powder and 1/4 teaspoon salt.
  3. Cover and chill for at least 4 hours before serving.
  4. Serve with meat or seafood salads.


Curried Onion Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1 cup mayonnaise, 1/2 cup sour cream, 2 tablespoons chopped scallions and 1/2 teaspoon curry powder.
  3. Cover and chill for at least 4 hours before serving.
  4. Serve with meat or seafood salads.


Dill Dip

  1. Prepare mayonnaise as directed in key recipe.
  2. In a medium bowl, combine 1 cup mayonnaise, 1 cup sour cream, 1/4 cup scraped onion, 2 tablespoons minced fresh dill weed and 1/2 teaspoon salt.
  3. Cover and chill for at least 1 hour before serving.


Fruit Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a chilled bowl with chilled beaters, whip 1/4 cup cold heavy cream until stiff peaks form.
  3. Into 1/2 cup mayonnaise, fold in the whipped cream.
  4. Stir into fruit salad of your choice.


Garden Mayonnaise for Fish or Seafood Salads

  1. Prepare mayonnaise as directed in key recipe.
  2. Stir in 1/2 cup drained, diced fresh tomatoes, 1/2 cup drained, diced cucumber and 1 teaspoon scraped onion.
  3. Salt to taste.


Golden Dip

  1. Prepare mayonnaise as directed in key recipe.
  2. In a medium bowl, combine 1/2 cup mayonnaise, 1/2 cup sour cream, 1/2 cup chopped pitted black olives, 2 tablespoons minced fresh chives, 1 teaspoon gluten-free Worcestershire sauce, 1/2 teaspoon prepared yellow mustard and 1/2 teaspoon curry powder.
  3. Cover and chill for at least 1 hour before serving.


Green Goddess Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a food processor or blender combine until smooth, 1 cup mayonnaise, 1/2 sour cream, 1/2 cup chopped fresh parsley, 3 tablespoons chopped fresh chives, 3 tablespoons white wine vinegar, 1 tablespoon lemon juice, 1 clove minced garlic, 1/4 teaspoon dried tarragon, 1/4 teaspoon salt and 2 dashes fresh ground black pepper.
  3. Cover and chill for at least 4 hours before serving.


Layered Vegetable Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 3/4 cup mayonnaise, 1 1/2 teaspoons lemon juice, 1 teaspoon paprika, 1/8 teaspoon cayenne.
  3. Spread dressing over top of layered vegetable salad, sealing to edges of salad bowl.
  4. Cover and chill for 2 hours before serving to let flavors blend.


Lemon Herb Sauce

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1/4 cup mayonnaise, 1 tablespoon lemon juice, 1 minced scallion, 1 1/2 teaspoons minced fresh parsley and 1 teaspoon minced fresh herb of your choice (basil, cilantro, lavender, mint, rosemary, savory, tarragon or thyme).
  3. Cover and chill for 30 minutes before serving.


Louis Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a medium bowl, combine 1/2 cup mayonnaise, 1/2 cup sour cream, 1/4 cup chile sauce, 1/4 cup minced scallions and 1 tablespoon lemon juice.
  3. In a chilled bowl with chilled beaters, whip 14 cup cold heavy cream until soft peaks form.
  4. Into mayonnaise mixture, fold in the whipped cream.
  5. Cover and chill for at least 2 hours before serving.
  6. Stir into Crab or Lobster Louis Salad.

  3. Serve with meat, fish or seafood salads.


Orange Dressing for Fish Salads

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 3 tablespoons mayonnaise, 3 tablespoons sour cream, 1 teaspoon grated fresh orange peel, 1 teaspoon Dijon mustard, 1 teaspoon prepared horseradish, 1/2 teaspoon garlic salt and 1/8 teaspoon fresh ground black pepper.
  3. Stir in to fish or seafood salad of your choice.


Parmesan Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1 cup mayonnaise, 3 tablespoons Parmesan cheese, 2 tablespoons lemon juice, 2 tablespoons white wine vinegar, 1 teaspoon white granulated sugar, 1/2 teaspoon dried oregano leaves, 1/2 teaspoon dry mustard, 1 1/2 teaspoons paprika, 1/8 teaspoon dried thyme leaves and 2 cloves minced garlic.
  3. Cover and chill for at least 3 hours before serving.


Parsley Cheese Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1 cup mayonnaise, 1/4 cup shredded cheddar cheese and 1 tablespoon minced fresh parsley.
  3. Cover and chill for at least 4 hours before serving.
  4. Serve with cooked vegetables, meat, fish or seafood salads.


Pink Fruit Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a chilled bowl with chilled beaters, whip 1/4 cup cold heavy cream until soft peaks form.
  3. Add 1 tablespoon maraschino syrup, and then whip until stiff peaks form.
  4. Into 1/4 cup mayonnaise, fold in the whipped cream and 4 minced maraschino cherries.
  5. Stir into fruit salad of your choice.


Roasted Red Pepper Aïoli

  1. Add 2 cloves minced garlic and 1/2 cup chopped cold roasted red pepper.
  2. Omit vegetable oil.
  3. Add 1 cup olive oil.
  4. Prepare as directed in key recipe.


Russian Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1/2 cup mayonnaise, 1 1/2 tablespoons chile sauce and 1 teaspoon scraped onion.
  3. Cover and chill for at least 2 hours before serving.


Seafood Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1/3 cup mayonnaise, 1/3 cup sour cream, 1/4 cup chile sauce, 1 tablespoon lemon juice, 1/2 teaspoon Dijon mustard, and 1/2 teaspoon prepared horseradish.
  3. Cover and chill for at least 2 hours before serving.


Sour Cream Mayonnaise

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1/4 cup mayonnaise, 1/4 cup sour cream, 2 teaspoons minced chives and a dash of fresh ground black pepper.
  3. Cover and chill for at least 2 hours before serving.
  4. Use as a dip for crudite platter, a dressing for salads or a topping for baked potatoes.


Sour Cream Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a medium bowl, combine 2/3 cup mayonnaise, 1/2 cup sour cream, 3 tablespoon lemon juice, 1 teaspoon grated fresh lemon peel, 1/2 teaspoon Dijon mustard, 1/2 teaspoon salt and 2 teaspoon minced fresh tarragon.
  3. Cover and chill for at least 3 hours before serving.


Tangy Fish Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1/2 cup mayonnaise, 1/4 cup buttermilk, 2 teaspoons granulated white sugar, 1 teaspoon Dijon mustard, 1/2 teaspoon Tabasco™ sauce.
  3. Cover and chill for at least 2 hours before serving.


Tartar Sauce

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1/2 cup mayonnaise, 2 tablespoons dill pickle relish, 1 tablespoon minced scallion and 1 tablespoon lemon juice.
  3. Cover and chill for 30 minutes before serving.


Thai Style Ginger Sauce

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1/4 cup mayonnaise, 2 teaspoons minced cilantro, 1 teaspoon minced fresh ginger, 1 teaspoon lime juice, 1 clove minced garlic, 1/4 teaspoon salt and dash of fresh ground black pepper.
  3. Cover and chill for 30 minutes before serving.


Thousand Island Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, combine 1/2 cup mayonnaise, 1 tablespoon chile sauce, 1 tablespoon dill relish, 1 chopped hard-cooked egg and 1/4 teaspoon paprika.
  3. Cover and chill for 30 minutes before serving.


Waldorf Salad Dressing

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1/2 cup mayonnaise, 1/2 teaspoon granulated white sugar, 1/2 teaspoon lemon juice and dash of fresh ground nutmeg.
  3. In a chilled bowl with chilled beaters, whip 1/2 cup cold heavy cream until soft peaks form.
  4. Into mayonnaise mixture, fold in the whipped cream.
  5. Stir into Waldorf salad.


Wasabi Mayonnaise

  1. Prepare mayonnaise as directed in key recipe.
  2. In a small bowl, mix together 1/4 cup mayonnaise, 1/2 teaspoon wasabi powder and a dash of gluten-free soy sauce. 
  3. Cover and chill for at least 15 minutes before serving.
