Sweet and Sour Meatballs Recipe--Key to Tantalizing Gluten Free Flavor!

The combination of tangy sauce and caramelized meat taste oh so good! For a beautiful presentation, serve over hot cooked rice and garnish with chopped scallions.
Instructions:
1. Preheat oven to 350°F.
2. Remove the rack from a roasting pan.
3. Cover the bottom of the roasting pan with non-stick aluminum foil, and then set aside.
4. In a large mixing bowl, combine ingredients.
5. Roll meat mixture into 30 one inch meatballs and place them in bottom of prepared roasting pan.
6. Bake for 30 minutes, until meatballs are browned with a caramelized crust.
Sweet and Sour Sauce
Ingredients:
- 1 20 ounce can pineapple tidbits and juice
- 1 tablespoon gluten-free soy sauce
- 1/2 cup apple cider vinegar
- 2/3 cup granulated white sugar
- 1 tablespoon potato starch
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground ginger
Instructions:
1. While meatballs are baking, combine pineapple tidbits with juice, soy sauce, sugar, potato starch, cinnamon, garlic powder and ground ginger in a large saucepan.
2. Cook over medium high heat, stirring constantly until sauce thickens.
3. Cover and remove from heat.
4. Remove meatballs from oven when done baking and place them in the hot sauce.
5. Stir until all meatballs are covered with sauce.
6. Serve hot.

125 ml apple cider vinegar
170 ml granulated white sugar

2.5 ml ground cinnamon
2.5 ml garlic powder
2.5 ml ground ginger
